Our whiskey wall runs deep, and our staff can talk through any bottle on it. Here's the short version of what sets our home state's whiskey apart.
It starts with grain, at least 51% corn, blended with barley, rye, or wheat, milled and cooked into a mash.
Yeast goes to work on the cooked mash, converting sugars into alcohol and creating what distillers call "distiller's beer."
That beer is distilled in a copper still, separating clear "white whiskey," or moonshine, from the water and grain.
The defining step: new whiskey is slowly filtered through sugar maple charcoal before it ever sees a barrel, mellowing out the rough edges.
Charcoal filtering pulls out harsh congeners and oily compounds before aging even begins, which is why Tennessee whiskey often drinks rounder than a straight bourbon with a near-identical mash bill.
After charcoal mellowing, the spirit rests in new, charred white oak. This is where it actually gets its color and most of its flavor, with vanilla, caramel, and toasted wood notes all coming from the barrel.
Look for caramel, vanilla, baking spice, and a gentle char or smoke note, with less of the grain-forward bite you'll find in some bourbons. Great neat, on the rocks, or in a classic whiskey sour.
